One of our favorite salads in the Twin Cities is from Cafe Lurcat. It’s simple, easy, unique and oh so delicious. This is always a hit whenever we serve it! While I’m not sure of Lurcat’s exact recipe, our flavors are reminiscent of it. Not your traditional “salad,” this is always a perfect addition to any menu.

Apple, Cheese and Chive Salad

Ingredients
- 1 lb apples roughly 3 apples (I like honeycrisp)
- 1/2 lb manchego cheese
- 1/4 cup fresh chives chopped (approx 1 bunch)
- Kosher salt
- Black pepper
- 2 Tbsp olive oil
- 1 tsp lemon juice
Prevent your screen from going dark
Instructions
- Julienne apples and manchego using a mandolin. If you don’t have a mandolin, simply cut into thin, uniform, matchstick pieces.
- Add to a large bowl. Combine with chives. Add pinch of salt and pepper, olive oil and lemon juice.
- Gently toss and serve.
