Apple Cider Loaf Bread

A most perfect breakfast or snack for the family!  Use fresh apple cider and a fun pan to bake in for the ultimate Fall vibes.  Dress it up for dessert with some fresh whipped cream.

Apple Cider Loaf Bread

Ingredients

  • 1 3/4 cup flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp apple pie spice
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup unsalted butter at room temperature
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs room temperature
  • 1/2 cup apple cider
  • 2/3 cup applesauce
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 Tbsp turbinado sugar divided

Instructions

  • Preheat oven to 350 degrees. Spray a standard loaf pan with nonstick cooking spray and set aside. (Note, it can be fun to use a Fall themed pan if you have one.  If you choose this option, make sure to dust with flour so it’s easy to release).
  • Combine flour through nutmeg in a medium bowl and set aside.
  • In a large bowl or using a stand mixer fitted with a whisk attachment, beat together butter, brown sugar and granulated sugar until well combined. Add eggs, one at a time and mix until incorporated.  Add the dry ingredients to the wet and stir until just combined. The mixture will be thick and dry. Then add apple cider, applesauce, sour cream and vanilla to the mixture and stir until incorporated.
  • Pour the batter into prepared loaf pan.  Sprinkle 1 Tbsp turbinado sugar over top.  For regular loaf, bake 50-65 minutes until a knife inserted in the middle comes out clean. Remove bread from oven to a cooling rack.  Sprinkle another dusting of turbinado sugar over top and let cool for at least 10 minutes before serving.
