Buffalo Chicken and Waffles

Ingredients

Buffalo Chicken:

  • 2 lbs chicken breasts
  • 1 onion chopped
  • 1 packet ranch seasoning
  • 1 – 12 oz bottle buffalo sauce

Slaw:

  • 2 cups shredded carrots
  • 4 celery stalks diced
  • 4 cups shredded green cabbage
  • 1/2 cup olive oil
  • 1 tsp celery seed
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 packet ranch seasoning
  • 1/4 cup white vinegar

Waffles:

  • 2 cups flour sub gluten free, if desired
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 Tbsp baking powder
  • 8 Tbsp melted butter
  • 2 eggs
  • 1 1/4 cups milk
  • 1 tsp vanilla extract

To Serve:

  • 5 oz crumbled blue cheese
  • Ranch dressing

Instructions

  • Add chicken breasts, garlic, onion, buffalo sauce and ranch seasoning in a crock pot. Mix to combine. Ensure all chicken breasts are covered in sauce. Cover and cook on high for 5 hours.
  • With 30 minutes remaining in cook time, shred chicken with two forks. Continue cooking for remaining time.
  • While chicken is finishing, prepare waffles and slaw.
  • Combine carrots, celery and cabbage in a medium bowl. Set aside. Combine remaining ingredients in a small bowl and whisk well. Pour over top of slaw. Toss well. Let sit until ready to serve.
  • Preheat waffle iron and spray with nonstick cooking spray.
  • In a medium bowl, mix all waffle ingredients.  Whisk until smooth.  Add 1/3-1/2 cup batter to each section of waffle maker. Close lid and cook until lightly browned, roughly 4 minutes.
  • Remove cooked waffles and repeat until all batter is used.
  • Cut waffles in half diagonally.  Top with shredded buffalo chicken.  Top with slaw.  Garnish with blue cheese and ranch.  Repeat with all waffles.  Enjoy!
