Chocolate Mousse

Ingredients
- 3 1/2 cups heavy cream divided
- 12 oz semisweet chocolate chips
- 6 large egg yolks
- 1/3 cup granulated sugar
- 2 tsp vanilla extract
To Serve:
- Chocolate shavings
- Whipped cream
- Flaky salt

Instructions
- In a medium saucepan, heat 1 cup heavy cream over medium low heat. Add chocolate chips and melt. Whisk to incorporate. Once smooth, turn heat off and set aside.
- In a medium bowl, whisk together egg yolks and sugar until well combined. Mix until pale yellow in color.
- Slowly whisk chocolate mixture into egg yolks. Whisk for 2 minutes until well incorporated and no lumps exist. Mix in vanilla extract. Place mixture in refrigerator.
- Using a hand mixture or stand mixture fitted with whisk attachment, beat remaining heavy cream until stiff peaks form, roughly 5 minutes.
- Remove chocolate mixture from refrigerator. Gently fold in whipped cream until combined throughout. Use gentle hands for this step as to not lose the texture.
- Spoon mixture to individual ramekins. Refrigerate 3 hours. When ready to serve, garnish with extra chocolate shavings and whipped cream, if desired. Sprinkle with flaky salt on top.
