  • 2 boxes vanilla or white cake mix batter prepared according to package instructions
  • 2 tsp almond extract divided
  • 3 sticks unsalted butter room temperature
  • 3 cups powdered sugar
  • 2 Tbsp milk
  • Zest and juice of 1 lemon
  • Blackberries raspberries, blueberries, roughly 1 pint of each


  • Preheat oven to 325 degrees.
  • Prepare cake mix batter according to package directions. Add 1 tsp almond extract to batter and mix well.
  • Spray a standard sized baking sheet with nonstick cooking spray. Pour batter onto baking sheet. Bake 30-40 minutes or until golden brown and a toothpick inserted in the center comes out clean. Allow time to fully cool.
  • In a large mixing bowl, beat together butter and powdered sugar. Slowly add milk, lemon juice, lemon zest and almond extract. Beat until well combined and no lumps exist. Adjust milk and powdered sugar as need to get desired consistency.
  • Spread a thin layer of icing on cooled cake (use roughly half of the mix) .
  • Make small square in upper left corner for “stars.” Outline with blackberries and fill in with blueberries. Alternate lines of raspberries and icing to make stripes. Add extra decor as desired.
  • Chill until ready to serve.
