Green Goddess Chicken Salad

I was looking for a high protein salad to have on hand for the week ahead. I love my homemade green goddess dressing and decided to throw it together with a few ingredients. The most delicious and easy high protein lunch!

Ingredients

Salad

  • 6 cups cooked chicken, cubed or shredded
  • 4 green onions, stems removed, greens and whites chopped
  • 5 stalks celery, chopped
  • 1 1/2 cup halved green seedless grapes
  • 1/2 cup slivered almonds

Green Goddess Dressing

  • 3/4 cup avocado mayonnaise or regular mayonnaise⁣
  • 3/4 cup Greek yogurt⁣
  • 1/2 small shallot⁣
  • 2 garlic cloves ⁣
  • 2 – 2 1/2 cups fresh herbs (dill, basil, parsley and chives are wonderful⁣)
  • Zest and juice of 2 small lemons or 1 large lemon⁣
  • 1 tsp kosher salt⁣
  • 1/2 tsp black pepper ⁣
  • 2 Tbsp olive oil⁣

To Serve

  • Fresh herbs
  • Crackers, gluten free if desired

Instructions

  • Start by preparing dressing. Combine mayonnaise through black pepper in a food processor and mix until smooth. While food processor is running, drizzle olive oil through feed tube to incorporate.⁣ Taste and adjust salt and pepper.
  • In a large bowl, add chicken, green onions, celery, grapes and almonds. Pour dressing over top and mix to incorporate.
  • Serve with crackers and top with fresh herbs.
  • Refrigerate in an airtight container for up to 3 days.
