Grilled Brie and Tomatoes

Ingredients
- 1- pint grape tomatoes
- 1 wheel Brie cheese
- ¼ cup fresh basil leaves torn if large
- Olive oil
- Kosher salt
- Black pepper

Instructions
- Dice or quarter tomatoes and toss in small bowl with 2 tablespoons olive oil, ½ teaspoon kosher salt and ¼ teaspoon black pepper. Set aside.

- Heat grill to high. Place Brie in rind directly on grill. Grill on first side for 3-4 minutes or until grill marks form. Flip and cook another 5-7 minutes or until heated through. (Note, this can easily be done on an indoor griddle or in an oven on a baking sheet at 425 degrees).

- Plate Brie on serving platter or serve on parchment paper. Top with tomato mixture and fresh basil to serve. This is great served alone, with gluten free crackers or grilled baguette slices!
