Ground Beef Tacos

It’s Taco Tuesday – let’s go!  Ground beef tacos are familiar to most but I promise you, these are better than your basic taco!  Full of flavor, crowd pleasing and fast – the best qualities for a perfect weeknight meal.  Serve with rice, beans or our Elote Street Corn Dip.

Ground Beef Tacos

Ingredients

  • 2 Tbsp unsalted butter
  • 1 shallot diced
  • 3 cloves garlic minced
  • 1 lb ground beef
  • 2 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 Tbsp lime juice
  • 1 can green chiles undrained
  • 1 can pinto beans drained and rinsed

To Serve:

  • 8 corn tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Avocado cubed or sliced
  • Cotija cheese crumbled
  • Cilantro lime Crema see below

Cilantro Jalapeño Crema:⁣

  • 1 bunch fresh cilantro stems removed⁣
  • 1/2 jalapeno remove seeds if you want it less hot⁣
  • 2/3 cup sour cream⁣
  • 2/3 cup avocado mayonnaise ⁣
  • Juice of 1 lime⁣
  • Pinch of salt⁣

Instructions

  • Heat a large skillet or stockpot over medium heat.  Melt butter.  Add shallot and garlic and cook 3-4 minutes.  Add ground beef.  Break apart with spoon or spatula.  Start to lightly brown.  Add spices (paprika through pepper).  Mix well to combine.  Cook 8-10 minutes.
  • Add lime juice and scrape any pieces off bottom of pan.  Add chiles and beans.  Mix well to combine.  Turn heat to low and cover.
  • Using tongs, warm tortillas directly over gas burner set to low, or in a skillet. Assemble tacos with ground beef mixture and desired toppings.

Cilantro Jalapeño Crema:⁣

  • In a food processor, combine all ingredients for cilantro jalapeño crema and process until smooth.  Set aside.  ⁣
