It’s Taco Tuesday – let’s go! Ground beef tacos are familiar to most but I promise you, these are better than your basic taco! Full of flavor, crowd pleasing and fast – the best qualities for a perfect weeknight meal. Serve with rice, beans or our Elote Street Corn Dip.
Ground Beef Tacos

Ingredients
- 2 Tbsp unsalted butter
- 1 shallot diced
- 3 cloves garlic minced
- 1 lb ground beef
- 2 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp cumin
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 Tbsp lime juice
- 1 can green chiles undrained
- 1 can pinto beans drained and rinsed
To Serve:
- 8 corn tortillas
- Shredded lettuce
- Diced tomatoes
- Avocado cubed or sliced
- Cotija cheese crumbled
- Cilantro lime Crema see below
Cilantro Jalapeño Crema:
- 1 bunch fresh cilantro stems removed
- 1/2 jalapeno remove seeds if you want it less hot
- 2/3 cup sour cream
- 2/3 cup avocado mayonnaise
- Juice of 1 lime
- Pinch of salt

Instructions
- Heat a large skillet or stockpot over medium heat. Melt butter. Add shallot and garlic and cook 3-4 minutes. Add ground beef. Break apart with spoon or spatula. Start to lightly brown. Add spices (paprika through pepper). Mix well to combine. Cook 8-10 minutes.
- Add lime juice and scrape any pieces off bottom of pan. Add chiles and beans. Mix well to combine. Turn heat to low and cover.
- Using tongs, warm tortillas directly over gas burner set to low, or in a skillet. Assemble tacos with ground beef mixture and desired toppings.
Cilantro Jalapeño Crema:
- In a food processor, combine all ingredients for cilantro jalapeño crema and process until smooth. Set aside.
