Let’s face it, eating healthy is hard. Often tight on time and short on energy, I try to keep some healthy ingredients on hand to stay on track. These are ready in under 5 minutes and a great snack or even part of a quick lunch! Also great after a workout or for an evening snack. The options are endless!
Loaded Rice Cakes

Ingredients
- 2 rice cakes I prefer white cheddar
- 1/4 cup favorite hummus
- 2 mini cucumbers sliced
- 1/4 cup mini tomatoes sliced
- Olive oil
- Finishing salt
Prevent your screen from going dark
Instructions
- Spread hummus evenly over rice cakes. Top with sliced cucumbers and tomatoes. Drizzle with olive oil and sprinkle with a little finishing salt or kosher salt.
- Want to get extra crazy? Add a sliced or diced hard boil egg for extra protein.
