Mint Chocolate Chip Protein Balls

You love them, we love them, let’s make them again!  Our protein balls are a favorite of yours and ours.  So very easy to make and always a crowd pleaser.  One batch will only last a day or two in our house!  With 14g of protein per ball and less than 12g of carbohydrates in each, these are a great pop of energy!  Easy to double or triple and make a big batch.

Mint Chocolate Chip Protein Balls

Ingredients

  • 1 1/2 cups peanut butter
  • 2 scoops mint protein powder
  • 1 scoop chocolate protein powder
  • 2 scoops collagen peptides
  • 3 Tbsp chia seeds
  • 1 cup oats sub protein oats for added protein
  • 1 Tbsp honey or agave syrup
  • 1/2 cup mini chocolate chips
  • 12 Andes mint chocolate candies broken into pieces

Instructions

  • Soften peanut butter in microwave for 30 seconds.
  • Combine all ingredients except Andes mints in a medium bowl. Use a spoon to mix well and ensure all ingredients are evenly distributed. The peanut butter and honey will help bind but if mixture is too dry, add a few teaspoons of water.
  • Use an ice cream scoop to scoop onto baking sheet. Once all dough is scooped, use your hands to form more firm balls. Work quickly as heat of your hands will warm ingredients.
  • Break mints into thirds. Press one mint piece into top of each ball.
  • Once all balls are rolled, freeze for 15-30 minutes to ensure they keep their shape. Enjoy!
