One Pot Burrito Bowl

Ingredients
- 3 Tbsp unsalted butter
- 1 yellow onion diced
- 3 garlic cloves minced
- 2 lbs ground turkey
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp ground cumin
- 1 Tbsp chili powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 15 oz can white cannelini beans drained
- 1 can green chiles drained
- 2 – 10 oz bags frozen cauliflower rice
- 1/2 cup broth or water
- Juice and zest of 1 lime
To Serve:
- Cotija cheese crumbled
- Shredded lettuce
- Tomatoes diced
- Fresh cilantro
- Lime wedges

Instructions
- Heat a large stockpot or high sided skillet over medium heat. Melt butter. Add onion and garlic. Cook 3-4 minutes. Add ground turkey and break up with a spoon or spatula. Cook 7-8 minutes or until lightly browned. Add seasoning (garlic powder through black pepper). Stir to combine.
- Turn heat down to low. Add beans, chiles, cauliflower rice and water. Stir to combine. Cover and cook 8-10 minutes or until cauliflower rice is cooked through.
- Add lime zest and juice. Taste and adjust seasoning (salt and pepper) as needed. Serve directly out of pan. Garnish with toppings of choice and serve.
