Red, White and Blue Salad

Ingredients
- 6 – 8 cups arugula
- 2 cups strawberries diced
- 2 cups blueberries
- 1/2 cup feta cheese crumbled
- 1/2 cup favorite nuts chopped (roasted or candied work great)
Dressing:
- 1/2 cup olive oil
- 2 Tbsp maple syrup or honey
- 1 Tbsp dijon mustard
- 2 Tbsp lemon juice
- 1 tsp kosher salt
- 1/4 tsp black pepper
Prevent your screen from going dark
Instructions
- Combine all ingredients for dressing in a small bowl. Whisk until smooth.
- Toss salad greens with half of dressing in a large bowl. Add fruit, feta and nuts. Toss again very lightly. Serve with remaining dressing lightly drizzled over top.
Notes
Serves 4 as main entree or 6-8 as side salad
