Red, White and Blue Salsa with Black Beans

  • 2 cups strawberries diced
  • 2 cups blueberries
  • 1 1/2 cups jicama peeled and diced
  • 1 can black beans drained and rinsed
  • Juice and zest of 1 lime
  • 2 tsp kosher salt
  • 2 tsp maple syrup
  • 1/4 cup fresh mint lightly chopped


  • Mix all ingredients together in a medium mixing bowl.  Serve with tortilla chips.
