An easy and festive dip to add to your patriotic table.
Red, White and Blue Salsa with Black Beans
- 2 cups strawberries diced
- 2 cups blueberries
- 1 1/2 cups jicama peeled and diced
- 1 can black beans drained and rinsed
- Juice and zest of 1 lime
- 2 tsp kosher salt
- 2 tsp maple syrup
- 1/4 cup fresh mint lightly chopped
- Mix all ingredients together in a medium mixing bowl. Serve with tortilla chips.
