Roasted Delicata Squash

The perfect side dish for Thanksgiving or for a family dinner! A little sweet, a nice crunch and beautifully colorful.

Roasted Delicata Squash

  • 1 lb delicata squash halved and seeds scooped out
  • 1/4 cup olive oil
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 shallot roughly chopped
  • Honey or maple syrup
  • 4 oz goat cheese
  • 2 Tbsp pepita seeds
  • 2 Tbsp pomegranate seeds
  • Fresh dill


  • Preheat oven to 425 degrees.
  • Cut squash into 1/2” wide moons. Add to a large gallon sized bag with olive oil, salt, pepper and shallots. Seal bag and toss to combine.
  • Spread coated squash on baking sheet. Bake for 20-25 minutes or until lightly golden brown. Let cool for 5 minutes.
  • Spread delicata on serving platter. Drizzle lightly with honey or maple syrup. Sprinkle with crumbled goat cheese, pepitas and pomegranate seeds. Garnish with fresh dill.
