Roasted Rosemary & Cayenne Almonds

I always dreamed about being one of those houses where homemade snacks were beautifully dissolved in glass containers for everyone to enjoy. While we aren’t that fancy, it’s fun to have healthy and delicious choices around. These are a little bit sweet, a little bit spicy and perfectly delicious.

Ingredients

  • 1 lb raw & unsalted almonds
  • 2 Tbsp finely chopped rosemary
  • 2 tsp brown sugar
  • 2 tsp kosher salt
  • 1 1/2 Tbsp coconut oil, melted
  • 1/2 tsp paprika
  • 1/2 – 1 tsp cayenne pepper, depending on how spicy you want it

Instructions

  • Preheat oven to 350 degrees.
  • Spread almonds on a baking sheet in a single layer. Roast 8-10 minutes, stirring halfway through, until color has darkened a bit. While almonds are roasting, combine remaining ingredients in a large bowl. When almonds are done, immediately toss in mixture, combining well to coat. Let cool and then toss again to break up any pieces that may be stuck together. Store in an airtight container up to one week.
