Spinach & Berry Salad with Poppyseed Dressing

Ingredients
- 8 cups baby spinach
- 4 cups mixed berries
- 1 avocado, sliced
- 1/2 cup crumbled feta or goat cheese
- 1/2 cup breadcrumbs, panko or regular
- 1 Tbsp unsalted butter
- Poppyseed dressing of choice our homemade recipe linked

Instructions
- Heat a medium nonstick skillet over medium heat. Melt butter. Add breadcrumbs and toast, moving around frequently so they brown but don’t burn. This will take 5-7 minutes. Once lightly browned, turn heat off and remove breadcrumbs from heat and allow time to cool.
- Toss spinach with a few tablespoons of poppyseed dressing. Add to serving bowl. Garnish with berries and avocado slices. Top with cheese and toasted breadcrumbs. If desired, add additional dressing.
