Summer Peach Salsa

  • 2 peaches diced
  • 2 kiwi peeled and diced
  • 2 avocados pits removed and diced
  • 1/2 red onion minced
  • 3 cloves garlic minced
  • 3/4 cup tomatoes diced
  • 1/2 cup fresh parsley minced
  • Juice of 1 lime
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 6 corn tortillas
  • Kosher salt
  • Tajin


  • Preheat oven to 400 degrees.
  • In a medium bowl, combine peaches through cayenne pepper.  Mix well and set aside.
  • Lay corn tortillas on baking sheet.  Spray with nonstick cooking spray.  Use hands to spread nonstick spray all over tortillas.  Sprinkle salt and tajin over top.
  • Bake for 10 minutes, flipping midway through.
  • Remove from oven and cut into triangles.  Serve homemade tortilla chips with fresh salsa.
