Sweet & Smoky Salmon with Lemon Caper Tapenade

Ingredients

Salmon:

  • 1 tbsp paprika
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dry mustard
  • 1/4 tsp red pepper flakes
  • 3 Tbsp light brown sugar
  • 1 tsp salt
  • 4 – 4 oz salmon filets

Lemon Caper Tapenade:

  • 1/4 cup capers
  • 1/2 cup pitted green olives
  • 1/4 cup fresh parsley minced
  • 2 Tbsp fresh dill minced
  • 1 Tbsp fresh chives minced
  • 2 tsp olive oil
  • 1 Tbsp lemon juice

Instructions

  • Preheat oven to 350 degrees.
  • Mix spice mixture (paprika through salt) in a small bowl. Place salmon on baking sheet lined with parchment paper. Sprinkle spice mixture on salmon. Press down to ensure it sticks to salmon.
  • Drizzle very small amount of olive oil over salmon. Bake for 12 minutes.
  • While salmon is baking, prepare tapenade. Combine all ingredients in a small bowl and gently mix together.
  • When salmon is done, plate and dollop with 1/4 of tapenade. Squeeze any remaining lemon juice over salmon. Serve with couscous or rice.
