Turkey Confetti Burritos

My mom used to make a version of these turkey burritos when we were kids and I think the confetti name was just for fun so we didn’t notice the veggies. Easy, delicious and perfect for all of those growing kids in your house. Double the recipe and save for a quick snack!

Ingredients

  • 2 Tbsp unsalted butter
  • 1 shallot or 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 lbs ground turkey
  • Salt and pepper, to taste
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 cup broth or water
  • 1 medium sweet potato, peeled and diced
  • 1 ,can black beans, drained and rinsed
  • 1 jalapeno, seeded and diced
  • 1/2 cup bell pepper, diced
  • 1 cup white rice, cooked
  • 1/4 cup Mexican cream or sour cream
  • 1 1/2 cups shredded cheese, divided
  • 6-8 tortillas, burrito sized (sub gluten free, if desired)

To Serve:

  • Fresh cilantro
  • Sour cream
  • Salsa
  • Sliced avocado

Instructions

  • Preheat oven to 325 degrees.
  • Heat a large skillet or Dutch oven over medium heat. Add butter to melt. Add onions, cooking 3-4 minutes. Add garlic, cooking 1-2 minutes. Add ground turkey, salt, pepper, paprika and cumin. Cook until starting to brown. Break up meat while cooking with spoon or spatula.
  • Add sweet potatoes, water and black beans. Mix well. Turn heat down to low and cover. Cook 8-10 minutes. Add in jalapeño and bell peppers and mix well. Cook another 3-4 minutes.
  • Mix in cooked rice, 1 cup shredded cheese and cream. Ensure all is well combined. Remove mixture from heat.
  • Microwave tortillas for 30 seconds in microwave to make more pliable. spoon roughly 1/2 cup mixture on edge of tortilla and roll up like a burrito. Place in greased baking dish. Continue until all burritos are formed. Depending on how full you fill them and the size of your tortillas, you should finish with 6-8 burritos.
  • Bake for 10 minutes. Add remainder of shredded cheese and bake until melted.
  • Serve with toppings of choice.
